how to make healthy Kenyan chapatis _pumpkin chapatis/flat bread
3tps sugar
1/2tps salt
3 cups wheat flour
2 cups water.
1/2 cup cooking oil
1/4kg pumpkin
1cup self rising flour
Method
1.Peel and cut the pumpkin into small pieces and boil for ten minutes or until it's well cooked.
2.Then mash it and blend or sieve
3.Then put the blended pumpkin in a bowl
4.Mix salt and sugar in some water and add it to the blended pumpkin bowl and stir
5.Add a tablespoon of oil to the blended pumpkin bowl then add the flour and knead adding a little water now and then until you get a dough that is not sticking to your hands.
6. Apply some oil and cover it up for 15 minutes with cling film .
7.Cut the dough into small balls, roll and apply some oil on the rolled ball,then fold them into spring roll ,then form a circular shape coil and place them in a flat surface and cover the rolled oiled coils with a cling film to prevent them from drying.
.Roll and apply oil to all balls and place them in a flat surface covered.
8.Heat the pan and roll the coils into the required thickness.
9.Place the rolled ball in a pan to cook . When the bubbles start to form on top, turn the chapati, apply some oil and turn to cook until golden brown. Then turn the other side and apply some oil and cook turning them now and then so that they don't burn.
10. Put them in a hot pot to prevent them from drying and getting cold.
Note: to prevent the chapatis from getting soggy, you place serviettes under each chapati in the dish.
11.Repeat number 9 to all other balls.
Note:in order to have really soft chapatis you add some self rising flour and after kneading the flour you cover it with cling film for 15 to 20 minitus and after applying oil on the balls you cover them with a cling film in a flat to prevent them from drying.
Serve hot with any stew of your choice like beef stew, bean stew, ndengu stew, cabbage stew, chicken stew etc
