how to make Kenyan githeri(boiled maize and beans)with kales (sukuma wiki) and avocado.

Ingredients
.2 1/2 cups rosecoco beans
.2 large green soft maize
.10 cups water
.4 big potatoes
.a bunch of sukuma week or spinach or cabbage
.4 carrots
.2 onions
Method
. Wash the beans and put them in the jiko. Don't soak the beans because the nutrients will be lost in the soaked water.
.Put a carrot in the boiling beans to reduce acidity.
. Boil the beans for one hour and then add some salt to prevent the beans from peeling.add water now and then until it's soft and then add the maize kernels to the beans and boil until it's fully cooked and all the water has dried. It will take approximately three hours.
.Peel the potatoes and carrots.
.peel the onions and fry them until golden brown
.Add the tomatoes and fry them until soft
.cut the sukuma wiki and fry them until soft
.Add the potatoes and carrots and fry them for two minutes
.Add the cooked githeri and stir then add some royco cubes
Add some water and cook until the water is almost dry.
Serve hot with avocado. It's yummy and finger licking.
