Kenyan mukimo/mashed potatoes and beef
1kg green peas
1 soft green corn
2kgs potatoes
3 big Onions
20g cooking oil
Method
. Peel the peas and boil until well cooked
.Let the pees cool and blend
. Boil the maize first to harden because it's difficult to remove the kernels when it's uncooked.
.Peel the potatoes
.Fry the onions until golden brown
.Add the potatoes and stir them in the fried onions and cover them with a lid to cook for three minutes.
.Add the corn to the potatoes and stir them in the potatoes
.Add water and cover to cook until all the water has dried
.Add the blended peas and mash the potatoes
They will have a nice green color.
Serve hot with beef, vegetables, legumes, fish etc
I served mine with beef .

Meat is a high protein diet and corn is a high carbohydrate diet and full of antioxidants.
Potatoes have a lot of vitamin C and potassium.
